WikiHow.com offers a great lguide for saving watermelon seeds [including for replanting]. Directions include,

  • Gathering seeds from ripe, healthy fruit
  • Use seeds from gardens that grow the same type of melon
  • Donโ€™t salt the melon [as some do when eating]
  • Place seeds in glass or plastic container and fill with water
  • After several days, pour out water and any floaters
  • Rinse remaining seeds several times
  • Dry by placing in area a bit warmer than room temperature
  • Place clean seeds in container that seals and label [seeds will keep for up to five years]
  • To plant, start indoors in peat pots
  • Place in garden two weeks after last hard frost
  • Water. After  80 to 90 days, enjoy!

While tasty recipes for watermelon seeds exist [see below], a recent health and nutrition trend includes watermelon seed flour. OnsetWorldWide.comโ€™s post โ€œWatermelon Seed Flour Is a Big Deal and Itโ€™s here to Stay” reports,

It appears what started out as a substitute for grain flours in paleo and keto diets โ€ฆ watermelon seed flour was born out of necessity. It has become loved in a relatively short period of time, specifically for baking sweet treats โ€ฆ due to its inherent sweetness; they are watermelon seeds after all. 

The post further states,

One of the problems with traditional grains like corn and wheat is that they are harmful to biodiversity. They also tend to strip the soil of its nutrients. Watermelon seed flour helps with that problem. Watermelons are relatively sustainable and there is almost no waste. You can use just about every part of a watermelon.

In โ€œWatermelon Seed Flour: A Nutritional Powerhouse You Need to Know About,โ€   Healthbliz.com tells how to make watermelon seed flour at home. Here are the steps:

  • After consuming a watermelon, gather the seeds and thoroughly rinse them
  • Arrange the rinsed seeds on a baking sheet and let them air dry for several hours. Another method involves using an oven set to a 150ยฐF (65ยฐC), for 30 minutes. Avoid roasting.
  • When seeds have completely dried, use a high-speed blender or food processor to produce a fine powder. Pause to scrape bowl for a uniform texture.
  • Place flour in an airtight container and keep in a cool, dry environment. For longer preservation, consider storing in the refrigerator or freezer.
